Make sure to let the beef come to room temperature before cooking and most importantly, let it rest once removed from the oven. This will make for a better eating experience.
- Prepare a medium hot grill or cast iron griddle and preheat oven to 375 degree. Dry striploin, season with kosher salt and fresh cracked black pepper and let come to room temperature.
- Sear or grill striploin whole until a crust has formed on both sides and then transfer to a hotel pan with rack to slightly raise the striploin. Cook approximately 20 minutes until internal temperature reads 130 degree. Remove from oven and let rest 20-30 minutes lightly covered.
- Prepare a steamer and cook buns 1-2 minutes until just soft. Slice beef thinly and stuff buns then top with chimichurri and herbs. Place 3 buns on a rectangle plate as an appetizer and serve with extra chimichurri.
